If you love danishes, you will love this recipe! Not too sweet, crispy pastry, and who does't love pumpkin? As the sweet beginnings of fall is underway we thought this would be a great way to kickstart the season. If you are like me, fall is my favorite time of the year and there can never be enough pumpkin flavored treats!
Yield: 12 Servings | Cook Time: 20 Mins | Total Time: 40 - 45 minutes
Ingredients
Pumpkin Filling Ingredients
3/4 cup pumpkin puree (don't use pumpkin pie filling)
1/4 cup brown sugar, packed
1 tsp vanilla extract
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1/8 tsp ground cloves
1 egg
Cream Cheese Filling Ingredients
8 ounces cream cheese, softened
1/4 cup sugar
1 tsp vanilla extract
Danish Ingredients
2 sheets of puff pastry, thawed (I thaw mine in the fridge)
1 egg
1 TBLS water
Glaze Ingredients
1 cup confectioner's sugar
1-2 TBLS milk
Directions
Preheat oven to 400 degrees. Line a baking sheet with parchment paper.
For the Pumpkin Filling
Mix or whisk together all 8 ingredients until everything is combined well and egg is completely incorporated.
For the Cream Cheese Filling
In a seperate bowl using a hand mixer or stand mixer mix together all 3 ingredients until smooth and creamy.
Puff Pastry Assembly
Unfold both puff pastry sheets and lay out on a flat surface. Use a knife to cut along the folded marks to create 3 equal sized long strips (per pastry sheet). Cut strips in half. Equaling total 12 rectangle pieces.
Take a pairing knife and lightly score (don't cut all the way through) around the pastry creating a box outline (approx 1/2 inch from the edge.) Pierce inside the scored marks with a fork.
Take 1-2 TBLS of the cream cheese mixture and spread onto the pastry following the scored box you created. Next add the pumpkin filling on top of the cream cheese, 1-2 TBLS.
Follow this step until all 12 have been filled.
Mix together the egg and water and brush the edges of the pastry.
Bake 15 - 20 minutes until lightly golden brown and dough is cooked in the center.
Onced baked, transfer to a wire rack and let cool for 10 minutes.
For the Glaze
Mix together powder sugar and milk until creamy and smooth. If it's too runny you can add more sugar and if it's too thick you can add more milk, until you reached desired consistency.
Drizzle glaze over danishes and allow it to harden.
Danishes are ready to serve!
